Scallop And Ginger Broth
This fast easy broth is so satisfying and cleansing – it nourishes you from the inside out. After Easter you might feel like having simpler foods, ones that make you feel satisfied but not too full or tired, then this broth is for you.
If you haven’t any home made broth in your house then buy a quality broth/stock. You can tell a quality broth/stock by the fact that when cold it is gelatinous, a bit like jelly. Broths are really healing for your gastrointestinal tract partly due to the fact that they contain particular amino acids that the cells lining your gut wall love. Which means they become stronger and larger, which in turn helps to support all aspects of your gut not just digestion, but immunity and mood. Apart from fabulous bone broth there are other benefits found in this bowl of goodness – bok choy, high in vitamin C and carotenoids (vitamin A) and part of the cruciferous family of vegetables, is great support for your body’s hard work detoxifying out free-radicals. Ginger further supports the body by acting as an anti-inflammatory.
Altogether this broth is healing, cleansing, and refreshing for your body.
- 400mls home made chicken bone broth, warmed
- 5 – 6 large scallops
- ½ – 1 dessertspoon grated fresh ginger
- 1 small bunch baby bok choy, bulb end chopped off, washed
- 2 spring onions, chopped
- 1 large handful sprouts such as soy sprouts (found at markets) or home-sprouted lentils (optional)
Bring the broth to the boil, then turn down to simmer and throw in the scallops. Then add the rest of the ingredients.
Stir around to wilt the bok choy for a few seconds. Pour into your serving bowl and sprinkle over some pepper and salt to taste or Tamari sauce.
Alternatively, in a frypan sear the scallops, add the rest of the ingredients and warm to wilt the bok choy.
